Food and specialist retail: Quotation software for fishmongers
Quotation software for fishmongers that prices platters and larger orders from purchase cost and trimming loss, so a price for a party or a business is not guesswork.
Where quotes for fishmongers get stuck.
Fishmongers regularly get requests for larger orders: a buffet for a company party, platters for a wedding or a standing supply to a restaurant. The price depends on what the fish cost at auction or from the wholesaler, on what is left after cleaning and filleting, and on the time it takes to dress the platters. Buy a whole salmon and sell fillet, and you lose the head, frame and skin; with flatfish the loss is even larger. A quote based on the counter price per kilo will be wrong. And if the purchase price rises between quote and delivery, it has to be clear in advance who carries that.

From enquiry to signed quote.
Record yield per species
For each species and cut, the shop records what is typically left: how much fillet from a whole salmon, how much usable flesh from a turbot. Those figures come from your own practice and get adjusted when they turn out to be off. The quote then works from the weight you need to buy, not just what lands on the customer's table.
Add up purchase, labour and dressing
The quote adds the purchase cost of the raw fish needed to the time for cleaning, cutting and dressing, plus garnish and packaging. Staff see the breakdown and can adjust each part. The customer sees a clear price per platter or per head, without the internal calculation on show.
State validity and price risk
Because fish prices move, the proposal says how long the price holds and what happens if a species becomes dearer or unavailable. Once the customer accepts, the chosen platters, the date and the substitute agreement become one order, so the back room knows exactly what was agreed.
Alongside your calculations and price lists.
Purchase prices usually sit on invoices or price lists from the wholesaler and the auction, selling prices in the till and quotes in a word processor. We decide which prices the quote uses as its basis and who keeps them current. If a price list arrives as a file, it can be imported; otherwise the buyer enters a few reference prices each week. Yields per species are the shop's own knowledge and stay with the shop rather than being copied from a generic table.
Fixed platter price or calculated per request
For standard platters a fixed price per head works well, as long as you recalculate it now and then. For bespoke work, such as a buffet with lobster or a platter of wild fish only, calculating each request pays off. The system handles both: fixed prices for what comes up often and a calculation for anything off the standard menu.
Locking the price or charging market price
A fixed price gives the customer certainty, but the shop carries the risk if auction prices go up. Charging the market price on delivery is fairer to the shop but awkward for a customer with a budget. A middle route is a fixed price with a short validity and an agreed substitute for species whose price swings a lot.
Yield from experience or measured per batch
Most shops use a rule of thumb for what is left of a fish. Weigh each batch before and after filleting, and you see yield vary by season and by supplier. Measuring takes a little time but makes quotes for large orders far more reliable. You can start with the species that most often go into platters.
What we prepare in the quotes.
For the species that appear most often in platters and large orders we record the yields at the start, with your markup for purchasing, labour and presentation and a quote the customer accepts online. Then we work through a standard company buffet together, and a request in which an expensive species turns out to be unavailable between quote and delivery. Reading in supplier price lists can be switched on once the yields are right.

Explore pricing and optionsDo we need a yield figure for every species?
No. Start with the species that keep turning up in platters and large orders, such as salmon, cod and prawns. For fish that rarely appear in a quote, staff can enter an estimate during the calculation. After a handful of quotes it becomes clear which figures you need most and which can wait.
Does the customer see how the price is built up?
Not unless you want them to. The customer sees a price per platter, per head or per kilo, with what is included and how long the price is valid. The breakdown of purchase cost, loss and labour stays internal, so staff can adjust it without debating every line.
Can we update a quote when prices change?
Yes. A quote that has not been accepted yet can be recalculated at the current purchase price, and the customer sees a new version. Once accepted, whatever the proposal says about price risk and substitutes applies. That is why the agreement needs to be in the proposal from the start.
Does this work for standing supply to restaurants?
Yes, though it usually runs differently: a restaurant tends to get a price agreement per species for a period rather than a quote per order. The system can record that agreement and apply it to each delivery. The yield calculation then mainly helps you see whether the agreed price still works.
