Food and specialist retail: Operations dashboard for juice producers
An operations dashboard for juice producers that shows press yield by fruit batch, bottling loss, shelf life of stock and delivery reliability, with the source behind each figure.
Which figures juice producers really need.
For juice producers, press yield drives much of the margin, yet it is rarely looked at per fruit batch. A grower delivers apples that give less juice, or a batch of oranges turns out to have a lot of waste, and nobody notices until the monthly figures disappoint. Juice also disappears during bottling through rinsing, fill loss and rejected bottles, and stock goes past its date in the cold room. The data sits on batch cards, delivery notes and delivery lists, but not side by side. Juice producers need a dashboard that shows where yield and loss deviate and which batch, run or delivery that leads back to.

From scattered figures to one overview.
Agree the measures together
Together we set how press yield is calculated, what counts as bottling loss and when a delivery is late or incomplete. For each fruit, the production manager sets an expected range. A deviation is then an agreed signal rather than a feeling on the day, and everyone reads it the same way.
Link runs and deliveries
The dashboard reads batch cards with fruit weight and pressed volume, bottled quantities, stock with shelf life and deliveries with quantities delivered against call-offs. Every figure links to the run, batch or delivery it came from. Missing data is shown as missing, never silently as zero.
From signal to batch
If the yield from pears is lower this month, you click through to the runs and see which grower and which delivery day made the difference. If a customer has been short-delivered more often, you see which recipes and bottling blocks were involved. A number becomes a conversation with the grower or the team.
Figures from your own work.
The dashboard adds no new admin. It reads from the batch cards, stock, order system and delivery records that already exist. Each source keeps its own owner: production the runs, purchasing the fruit batches, sales the call-offs. Where a source is missing, for instance because bottling loss is not yet counted, the dashboard shows which figure is an estimate as a result and what would be needed to improve it.
Yield per grower or per fruit
Per fruit shows whether the season is good or bad. Per grower shows whether one supplier consistently delivers less juice than another. The latter is valuable in purchasing conversations, but requires every fruit batch to be linked to a grower. Start with fruit and add grower once that link is reliable.
Daily production view or monthly summary
The production manager benefits from a daily view of yield and loss per run, so deviations are discussed straight away. The owner prefers to look at trends and margins by month. Both come from the same data, so the figures on the floor and in the office never contradict each other.
Show everything or only deviations
A dashboard full of charts stops being looked at after a few weeks. A screen that shows only deviations outside the range by default, with the option to click through to the full picture, keeps attention on what matters. New indicators are only added when there is a real question behind them.
Which figures we put on the dashboard.
Pressing yield per fruit type and fruit batch, bottling loss per batch, bottled stock nearing its shelf life and delivery reliability per customer: that is what the dashboard shows from the start, with click through to batch and delivery. Together we look at an ordinary month, and a fruit batch with clearly lower yield plus a week in which a customer was twice supplied incompletely. Yield per grower and a monthly summary by email can be switched on whenever you like.

Explore pricing and optionsWhat data do we need to calculate press yield per batch?
For each run, the weight of fruit used from each batch and the volume pressed. That comes from the batch card. If it is filled in consistently, the dashboard calculates yield per batch and per fruit without any extra work in the press room.
Can the dashboard predict how much fruit we will need?
It can give an expectation based on recent yields and planned orders. That remains an estimate, because fruit varies from batch to batch. The purchasing decision stays with you, but with better grounds than a fixed rule of thumb.
Who in the business sees which figures?
You set that per role. The production manager sees yield, loss and stock, sales sees delivery reliability per customer and the owner also sees margins. When someone's job changes, their rights change too, without anything in the dashboard itself having to be rebuilt.
What if a figure on the dashboard looks wrong?
Click through to the source. Often a weight or volume turns out to have been entered incorrectly on a batch card. Correct it there and the dashboard follows. In that way the dashboard also helps improve recording in production over time.
