Food and specialist retail: Operations dashboard for nut retailers
An operations dashboard for nut retailers that shows stock age by nut type, roasting loss and open orders, with the source behind every deviation.
Which figures nut retailers really need.
Nut retailers often only notice something is wrong when it is already too late: a tray of roasted hazelnuts that sat too long and tastes stale, a variety whose roasting loss has quietly crept up, or a business order for which an ingredient is missing. The data exists, spread across the till, mixing cards, roasting lists and delivery notes, but nobody puts it side by side. The owner sees turnover in the till but not which stock is standing still. For nut retailers the point is to see which variety is getting old, where loss arises and which order is stuck, and to go straight from that signal to the underlying batch.

Example- 1
Agree the definitions together
DoneWe agree what counts as a signal: when a roasted batch is too old, what roasting loss is normal per variety and when an order counts as tight.
- 2
Pull data from the sources
In progressThe dashboard reads stock batches with roasting dates, signed-off roasting batches with weights before and after, mixing cards and open orders.
- 3
Follow deviations down to the batch
NextIf almond roasting loss is higher this month, you click through to the batches and see which lot and which day made the difference.
From scattered figures to one overview.
Agree the definitions together
We agree what counts as a signal: when a roasted batch is too old, what roasting loss is normal per variety and when an order counts as tight. The owner sets those limits, not the system. A red marker then means the same thing to everyone in the shop.
Pull data from the sources
The dashboard reads stock batches with roasting dates, signed-off roasting batches with weights before and after, mixing cards and open orders. Counter sales come from the till if it records them per variety. Every figure on the screen links back to the list it came from.
Follow deviations down to the batch
If almond roasting loss is higher this month, you click through to the batches and see which lot and which day made the difference. If cashews have been sitting too long, you see which reservation fell through. A number becomes a concrete question for the roaster or the buyer.
Figures from your own work.
The dashboard creates no new admin but reads from what already exists: the stock overview, roasting lists, mixing cards, the order overview and, where possible, the till. Each source keeps its own owner: the roaster their batches, the buyer the lots, the shop the sales. If a source is missing, such as a till that does not count per variety, the dashboard shows which figures are estimates as a result.
Check daily or review weekly
A dashboard that is open every morning helps with immediate choices, such as what to roast today. A weekly overview is better for discussing trends in loss or turnover. Often the roaster has a daily screen and the owner a weekly summary, and both read from the same data so the numbers never contradict each other.
Many indicators or a short list
It is tempting to show everything that can be measured. A short list with stock age, roasting loss and open orders actually gets looked at. We only add further indicators when there is a concrete question behind them, and an indicator nobody uses simply comes off again.
Signals per variety or per mix
Stock age and loss are clearest per nut variety. Customers, however, buy mixes, and a mix containing a slow-moving nut can hold up the whole tray. A second view per mix shows which recipes leave stock standing still, which helps you decide which recipes to change or drop.
Which figures we put on the dashboard.
The dashboard shows stock age per nut variety, roasting loss per variety and period and open business orders with their ingredient status, with click through to batch and run. Together we look at an ordinary week, and at a batch whose loss clearly differs and an order for which the ingredient arrives just too late. Turnover per mix and a weekly summary by email can be switched on if you want them.

Explore pricing and optionsWhat data do we need to keep for this dashboard to work?
At minimum, batches with roasting dates, roasting runs with weights before and after, and orders with delivery dates. The more fully the till records sales per variety, the more precise the turnover figures. Where something is missing, the dashboard shows it as an estimate rather than a firm number.
Can the dashboard predict when a variety will run out?
It can show an expectation based on recent sales and reservations. That remains an estimate, because the holidays or a street market can change demand sharply. The decision to order or roast stays with you and your team.
Who in the shop gets access to which figures?
You decide. The roaster might see stock age and roasting loss, while margins and turnover are visible only to the owner. Roles are set up once and adjusted whenever someone takes on a different task.
What do we do if a number on the dashboard looks wrong?
Click through to the source and see which batch, run or count drives the figure. Often a weight turns out to have been entered incorrectly. Correct it at the source and the dashboard follows. Over time your records get cleaner as a result.
